Recipe for thin sliced pork chops?

Iris Shawcroft: Those thin sliced pork chops are so hard to cook. If you fry them, they are tough and chewy and dried out. I think they work better if you slice them thin and make a pork stir-fry. Another way I cook them is to slice them in small slices and salt and pepper and then dredge them with flour and put in a skillet with a couple of tablespoons of oil and brown them quickly, adding about 2 tablespoons of flour to the excess oil, and then add about 2 cups of water and turn the heat down and simmer for about 1 hour and serve over rice or noodles. You can add some onions or green pep! per at the beginning if you want extra flavor, but the gravy plain is pretty good....Show more

Clay Lipira: My mother-in -law made a corn casserole with them. Quickly brown them and set aside. Mix together 2 cans creamed corn, 1 egg, 3/4 sleeve crushed cracker crumbs and 1/4 cup milk. Pour over browned pork chops in a greased baking pan. Pepper top and bake until crusty on top at 350, about 1 hr.. Always yummy.
